The Baking Tips
Coat chocolate chips in flour before folding them into your cake, muffin, or bread batter. The flour will help the chocolate stick to the batter and stop the pieces from just sinking to the bottom.
Stabilize fresh whipped cream (and prevent wilting) by adding a bit of marshmallow fluff to it. This adds structure to the whipped cream and helps it keep its shape.
Get rid of air bubbles in your cake batter by dropping the pan on the counter a few times after you’ve poured in the batter. This will break up the air pockets and ensure a more even bake.
Store cakes in the microwave – it’s tightly sealed, dust free (hopefully!) and will keep the cakes fresher longer.
Quickly bring eggs to room temperature by putting them in a warm water bath and letting them sit for 5 minutes.
Don’t dip the measuring cup directly into the bag of flour. Doing this compresses the flour and can often give you more flour than needed. Instead, spoon flour into the measuring cup.
Cut perfect cake slices and brownie squares by running your knife under hot water for a few seconds. Dry it off and then slice away – the residual heat will help cut clean lines. Repeat process as needed.
If you burn your baked goods, save them by gently shaving off the burnt spots with a handheld cheese grater or microplane.
